that would be good living in town in a house and be happy on one walk a day?

Every dog needs to go to the bathroom more than once, planning for at least 2 and best 3 times is more realistic, although it does need at least one GOOD walk a day for fresh air and excercise. Since you do too, this is good news.
My experience is that any breed can adapt to living in close quarters because all they do is interact with owners and baby, or sleep. Your concern might be more with age.
A puppy is active, curious, gets into everything, may be a little rough, will chew or scratch but an older dog, one that is 3 or 4 or even older will have outgrown that stuff and will be more apt to be mellow.
A dog also represents an expense and older dogs cost more in Vet bills because they develop conditions with age as do people. On the other hand, young dogs are more accident prone.

Every library or book store, if not on line, has fat books of dog breeds with large pictures and small amount of text. This will give you a good idea of where to begin. But realize that you will be adopting a new member of your family, so you will actually be falling in love and love is unpredictable and does not come from a catalogue.
l hope you will take your time to find the right dog because so many are put to death simply because they were wrong for the family that took them.

A good way to select a dog is through “breed rescue” for any breed you like, because these are pure-bred animals that concerned people, not owners, want to place into homes that will be permanent, so they are careful to list and/or discuss characteristics of each individual in terms of your particular circumstances.
An animal shelter also gets great dogs that are evaluated for temperament before being placed. The advantage is that you get to interact with the animal before making a final decision and you will get- insist on it- personal guidance from a knowledgeable person. There are so many shelters, so many unwanted animals, that you have your choice of several places to select from.
Worst places are pet stores whose dogs tend to have problems, or directly from owners who may misrepresent.
